Casual Boiled Dinner


My take on boiled dinner

1 Onion
1/3 Cup Freshly Chopped Parsley
5-10 Gold Potatoes
5 Whole Carrots
1 Clove Garlic
14 oz. Smoked Sausage
1 Head Cabbage
3 Beef Bullion Cubes

In pot add water, bullion cubes, chopped onion, finely crushed garlic, and chopped parsley.  Add salt and pepper.  Let this simmer for an hour or so and reduce  heat to low.
          +Add Potatoes and halved carrots.  Cook for 1 hour on low.
                   +Add quartered cabbage and smoked sausage.
                                        Cook until done.

Four Valuable Lessons in Roux

Lesson One: Take or have at side painkillers!
Lesson Two: Make sure people don't set off your car alarm so you have to run outside to make it stop!
Lesson Three: Don't use a Teflon pan and a wire whisk... DUHHHHH!
Lesson Four: Don't burn the shit!


Either A) Roux taste like shit or B) I burnt the shit...
                  or C) The Teflon particles ruined it.

My neck and back would not allow me to achieve the brick roux at this hour but I did make it to the medium brown roux.. Not bad for the first time.

Restaurant Experience: Granite City Brewery


Bruschetta Chicken Salad:  This was by far the best salad I have ever had!  I highly recommend going there just for the salad which is considered an appetizer.  
It features a bed of spinach, bruschetta with an amazing olive oil that seriously makes my taste buds do somersaults!  Around the edges is hard bread, and the chicken has an awesome flavor! Its also pretty low in fat.

I say forget the rest of the meal but the  "betta chedda" burger is topped with a pound of shredded cheddar, BBQ and bacon and it is actually quite good. 

On another note the buffalo chicken wrap is mediocre and can pretty much be found in any restaraunt.

Today's Adventure

Simple spinach salad, with grated carrots and balsamic Parmesan olive oil dressing


Marinaded, zesty herb grilled chicken tender cuts


and a fresh lemon!

My first attempt at chili!

Overall, after a few tweaks I feel that this chili recipe was pretty successful.


2 lb.        Ground Beef Chuck
3 Cans       Great  Northern Beans
1/2 Can      Tomato Paste
1 Can        Rotel 
1 Can        Diced Tomatoes
1/2-1 C.     Red Onion
1 Pkt.       Hot Chili Mix
5-10 Tbsp.   Cajun Seasoning
2 Tbsp.      Franks Red Hot
2 Beef       Bullion Cubes

Add water until consistency is to your taste

I cooked this in a crock pot on low for about 6 hours, easy as that.  I know its not customary to use great northern beans in chili but I don't care for the thick skin on chili beans.
